BUFFALO STEAK NACHOS

Grill marinated rib eye to desired temperature and dice. Place a large pile of nacho chips onto a foil lined baking sheet pan. Top chips with shredded cheddar cheese, diced tomatoes, diced green chiles, sliced black olives, and diced buffalo ribeye and bake in a 350 degree oven until cheese is melted.

    Southwestern Marinade
  • 2 cloves garlic, crushed 1 small yellow onion, chopped
  • 1 jalapeno, chopped (For less heat remove seeds & pith). 1 bunch fresh cilantro, chopped 2 lemons cut in half and squeezed to release juice 2 limes cut in half and squeezed to release juice
  • 1/2 cup red wine 1/4 cup oil
  • 4 Tbsp. soy sauce
  • 4 1/2 Tbsp. ground cumin 1 Tbsp. crushed red peppers 1 Tbsp. chili powder
  • 1 Tbsp. Kosher Salt
  • 1 Tbsp. fresh ground black pepper 1/2 Tbsp. oregano
  • 1/2 Tbsp. thyme
Directions: Mix all ingredients together and marinate steak overnight.
